SIX SUMMER SALADS

Summer is here & dang does it feel good!

We also want to feel good inside and what better way then to eat a salad that will leave you feeling cool as a cucumber & as light as a feather! Below I will be sharing six summer salads to spice up your greens:

  1. Mediterranean salad- I love to make a big batch of this and eat for lunch - its easy & tasty! I cut up a bunch of cheery tomatoes and cucumbers ( cut the cucumber circle into 4's for bite size chunks ) then mix in feta cheese, olive oil, Italian seasonings and salt & pepper! so delish!
  2. Chicken salad salad- hehe so much salad! Make chicken salad by using shredded lettuce mix with either miracle whip (me ) or mayonnaise ( my bf ). Next add your choice of grapes & walnuts, craisins and walnuts, celery or anything else you can think would make a good combo. Now throw a large table spoon full on top of some fresh arugula and spinach. Yum! I would prob add tomatoes too because they are just so refreshing!
  3. Chop Chop fiesta  salad- now I like the chop style salads because you can get so much flavor into a bite so really you can use this technique with your own array of favorite ingredients. Here I suggest- corn, salsa, shredded cheese, tortilla strips & black olives for a fiesta party in your mouth! 
  4. Sweet apple & berry salad-  fruit & salad= healthy AF. Cut up apple slices and strawberries, add them to a nice dark green lettuce. Top with walnuts, cashews or pecans for a nutty sweet bite!
  5. Super veggie salad - veg it up with!! Slice green, red & yellow peppers. Add onion,  tomato, fresh green beans, carrots and corn for all your veggies in one meal! Top with a vinaigrette or Italian dressing!
  6. Last- but deff not least! ( also, not the healthiest but maybe most delish =) hehe ) Cheesy tortellini salad- over a bed of lettuce place creamy cheese tortellini's with crumbled bacon and Parmesan cheese. Add shredded carrots and top with a delish creamy cesar or ranch.
